Bresaola originates from Italy’s Lombardy region and it is a versatile type of air-dried salted beef that is great in salads, pasta dishes and appetisers. It is not fatty therefore a healthier choice if you are on a diet. With many salads, I like to add a little plate of mixed colours peppers, black olives, cherry tomatoes, artichokes heart and garlic bread but it’s perfect even on its own.

Ingredients
80g bresaola (1 pack)
1 pack rocket salad
50/80g parmesan flakes
2 spring onion bulbs, chopped (optional)
Citronette (extra virgin olive oil, lemon juice, salt)
Prepare the salad
Arrange all ingredients in 2 plates, add the citronette and serve.
