Caramelised Plantains

They are great as a sweet side to savoury dishes like stews and steaks. Super easy to make with only a handful of ingredients they are delicious also with rice, beans and fried eggs. Yummy!

Recipe for 1-2 people

Ingredients

1 plantain (must be very ripened)

1 tsp of butter

½ tsp of sugar

¼ tsp of ground cinnamon

Some water

Method

Peel the plantain and cut it into thick slices of 2-3 cm each.

Preheat a frying pan on medium heat, add the butter, let it melt, and add the slices of plantain.

Cook the slices for about a minute on each side.

Turn them over one more time and sprinkle some sugar and cinnamon on top.

Ripen plantains are naturally sweet, so there’s no need to add too much sugar. This is needed just to improve the caramelisation process and cinnamon adds great taste to it!

Cook for 2-3 minutes and turn over.

Sprinkle some more sugar and cinnamon and cook for another 2-3 minutes.

Turn over the slices to avoid the sides getting burned, but do not worry if they get dark. This occurs normally due to the caramelisation and it is exactly what we want.

When the pan gets dry, add a splash of water and carry on cooking.

Move the slices every so often so they don’t get stuck to the pan.

When a nice dark brown coat has formed on both sides of the plantain slices, reduce the heat.

Add some water to the pan and let them cook for about 5 minutes with the lid on. This is just to retain the moisture while cooking, so do not add too much water at a time. Less than half a cm of water on the pan should be more than enough. Otherwise, you may end up with boiled plantains instead.

Turn over the slices and repeat the process.

When you see a nice sticky caramel sauce, the plantains are ready to be served.
