In 2022 I spent Christmas with my family in Toulouse, France, as my grandmother was too ill to travel. Each family member cooked something and amongst other things, my cousin Laurene prepared this fabulous chickpea side dish with oranges. When I returned back home in London, I wanted to add my own touch to it and I added avocado and roasted salmon. The result was fantastic!
Recipe for 2 people
Ingredients
400 g chickpeas in salted water
1 tbsp fresh chopped coriander
1 tbsp fresh chopped flat-leaf parsley
1 tbsp fresh chopped mint
1 tbsp extra virgin olive oil
Pinch of black pepper
Salt to taste
Half chopped red onion
The juice of half lemon
1 tsp grated lemon zest
The juice of half orange
1 tsp grated orange zest
Half orange cut into half-moon slices without the peel
Method
If you use chickpeas from a can, just rinse them and place them in a bowl.
If you use the dried type, you need to soak them in water for a few hours and then boil them until cooked.
When ready, place them in a bowl and let them cool down before adding the ingredients.
Add all chopped ingredients and mix well.
Adjust the seasoning if needed and eat them with your favourite bread, fish or meat.
