Roasted Gammon Joint

I love roasted gammon. I buy the Be Good To Yourself type because it’s lean and my toddler like it especially in her soups. It is very versatile. You can pack it with your lunch box, enjoy it with your eggs for breakfast, use it to prepare pies or make glorious sandwiches. This simple recipe does not require too much time, so it’s perfect for busy people who want to enjoy homemade meals.

Recipe for 4 people

Ingredients

900 g lean gammon joint

Extra virgin olive oil

1 tsp. dried rosemary

1 tsp. dried thyme

1 tsp. fresh flat-leaf parsley, chopped

Black pepper

Salt to taste

Method

Preheat the oven to 190°.

Take a roasting tray, add a little extra virgin olive oil, and place the gammon in it.

Add a little more extra virgin olive oil on top of the gammon, add the herbs and season.

The instruction generally advises cooking it for 30 minutes per 500 g + 30 minutes. But of course, it depends on what kind of oven you have so this is a general guide only. I have a rather old electric oven and I cook it for about 1 hour.

After cooking, allow to stand for a couple of minutes before slicing the meat.

Enjoy it with your favourite veggies, warm bread, and your favourite condiments (mustard is my favourite!).
