Let’s face it. Soups with cheese spread triangles can make any soup taste amazing. My baby loves this type of cheese and it is a great combo with cauliflower and broccoli.

Ingredients
4 cauliflower florets (with the stalks)
4 broccoli florets (with the stalks)
1 tbsp. extra virgin olive oil
1 small piece of red onion
½ tsp. basil, finely chopped
1 Laughing Cow cheese spread triangle
1 tsp. of freshly grated parmesan cheese
Method
In a medium pot, add the veggies (washed and chopped) to boil over medium heat
After 20 minutes or so, the soup is ready
Add the Laughing Cow cheese and puree with a hand blender
Add the parmesan, mix and serve
